ABOUT
Zorro, a plot comprised of both green and bronze tips is situated at 1570 MASL at Finca Santa Teresa. Zorro occupies a beautiful location that faces the sunrise and benefits from good shade from surrounding native trees. To achieve this natural process the cherry is picked when fully ripe and within hours spread out on raised beds under high altitude sun. The cherry is turned every few hours for even drying. This drying takes 4-6 weeks. We finish off the drying in the oven to help with the evenness of moisture and water content before hulling.

Finca Santa Teresa (FST) is a coffee farm and mill in Santa Clara, Renacimiento, nestled high in the cloud forest near the Volcán Barú; Panama’s highest peak, adjacent to La Amistad National Park, a UNESCO World Heritage Site. The Farm occupies 237 acres of stunning forest between 1400-1900m above sea level.

The coffee produced by FST is the antithesis of monolithic simplicity.

Between November and February, coffee is picked from the 20 different lots on the farm. Soon after picking, the coffee is processed using one of three main processing methods – washed, honey, or natural. Depending on the method, this can see the coffee drying on raised beds (known as Camas Africanas) for up to a month.

A regular finalist in the Best of Panama competition, with more than a dozen awards in the last decade, FST produces a range of premium specialty coffees, including Gesha, Caturra, Catuai, Typica, and Pacamara varietals.
