Finca Milan is located in the Risaralda Department, nestled in the central foothills of the Andes Mountains. The region benefits from nutrient-rich, young volcanic soil, which provides an ideal foundation for coffee cultivation. The climate features a significant temperature range, with daytime highs reaching 30ºC and nighttime lows dropping to 15ºC. This variation promotes the development of coffee cherries with distinctive and complex flavors.Of the 250 hectares that comprise Finca Milan, 220 hectares are dedicated to cultivating a diverse range of coffee varieties, including Caturra, Castillo, Pink Bourbon, and Catiope.

Processing

Ripen red cherries are selected for mixed microbial fermentation. The cherries are first separated bydensity, tested for sugar content, and classified by quality. After depulping, the cherries, still inparchment form with mucilage, are mixed with pre-cultivated microbes. Fresh fruit puree is addedduring fermentation to supply nutrients, though the resulting flavors may not directly reflect thefruit used.Andrés collects and cultivates natural microbial strains, such as Pichia and Kazachstania yeast, which areextracted and mixed as needed to create custom fermentation solutions. Sometimes, external yeast strainsare also incorporated. The goal of these yeast fermentation processes is to enhance the quality of greenbeans, modify coffee flavor structures, and maximize the potential of different varieties, leading to moreintense and memorable flavor profiles.
